This was particularly significant because
at that time there were no sweet onions available in the entire
world during the fall and winter months. With the growing of sweet
onions in The New York Times Interviewed Jim in Rio de Janeiro, citing his vision into the produce industry. Jim Huston introduced Yukon Gold potatoes in the early 1980’s. This was a major step in the improvement of the lowly, tasteless potato and elevated the potato into a gourmet culinary treat enjoyed by the entire country. While in Paris, promoting his Yukon Golds, Jim was introduced to the La Ratte potato. This was one of France’s national treasures and prized by famous chefs like Joel Robuchon, considered the world’s finest chef. Mr. Robuchon used the La Ratte in a puree as his signature dish. Jim Huston brought the La Ratte back to the USA where it is used in all fine restaurants across the country.
